Apple and Beetroot Salad with an Orange Tahini Dressing

Ingredients

2 small Beetroots peeled and shredded

2 Apples peeled and shredded

1/2 cup Fresh mint

4 cups mixed salad greens or rocket

Orange tahini dressing:

1/3 cup tahini

1/3 cup Water

1/4 cup Orange juice

1 Clove Garlic

1 tablespoon Ginger grated (optional)

1/2 teaspoon Cumin

1/4 teaspoon Celtic Salt

Dash Cayenne pepper

Directions

Combine shredded beets with the apples and mint in a bowl.

To make the dressing place everything in a blender and blend till smooth.

Add enough dressing in the bowl with the apples and mint to lightly coat.

Allow to marinate for 30 min at room temperature or overnight in the refrigerator.

Arrange the greens on a serving plater and place the marinated beets and apples on top.

Serve immediately.
